What to Eat Wednesday: 10 Diabetic Superfoods

A simple red pepper could be a Superfood if you have diabetes!All you hear about these days is superfoods…between Farro, Acai Berry and the ever popular (but kinda freaky) Freekeh, it seems like there’s a new miracle food fad each week.

While diabetics can certainly benefit from superfoods that benefit the general population, the American Diabetes Association has generated its own list of diabetes-specific superfoods (most available in any grocery store!), designed to help you manage blood sugar and improve your over-all health.

Try adding one or more of these to your daily, weekly or even monthly meal plan and star racking up the health benefits!

10 Diabetic Superfoods

  1. Aspargus—high on taste, low in carbs and calories; studies even suggest it can keep blood sugar in control and stimulate insulin production!
  2. Beans—1 cup of legumes daily results in better blood sugar control and lower blood pressure
  3. Baby carrots—these make for a perfect snack! Low on starch, five baby carrots are considered a free food that don’t even need to be recorded on your meal plan.
  4. Watermelon—contains lycopene, which can protect against cell damage.
  5. Nuts—can improve blood sugar control in Type 2 diabetes, but watch portion control, as they’re also high in calories.
  6. Oatmeal—its soluble fiber content can help delay the rise of blood sugar
  7. Raspberries—their ellagic acid helps fight insulin resistance while lowering blood sugar and staving off inflammation.
  8. Red Grapefruit—another great source of soluble fiber. Can interact with some meds, so check with your doctor about counter-indications for your drug-regimen.
  9. Red onions—much higher in antioxidants than any other variety of onion.
  10. Red peppers—serving size is one whole cup, giving you lots of food for very little starch and calorie exchange.
