What to Eat Wednesday: All Dressed Up


At this time, our office continues to be open to new and existing patients. We use hospital-grade sanitizers and are taking measures to ensure patients maintain social distancing by not having anyone wait in our reception room with others. We are continuing operation in an effort to keep patients out of the urgent care clinics and hospital emergency departments, which increases the chances of being exposed to the virus. We have x-ray and ultrasound in the office to prevent you from having to go elsewhere.

Jazz up an all-veggie salad like this one with 4,3,2,1 dressing!Pretty much everyone I know needs to incorporate more vegetables into their diet—heck, even when I was briefly a vegan, I probably still didn’t get enough greens. But, while eating your veggies is important for everyone, for diabetics looking to maintain a healthy weight and control blood sugar, it can be crucial.

Here’s the thing, though—sometimes it’s hard to get excited about eating a salad for lunch…but not when you add on this fabulous 4…3…2…1 Dressing (even the name is fun!) from the American Diabetes Association. Try it tonight and see your side-salad jump straight to the main event!

This Recipe Serves 8


1/4 cup plain fat-free Greek yogurt (4 tablespoons)
3 Tbsp mayonnaise
2 Tbsp whole-grain mustard
Juice of 1/2 small lemon (1 Tbsp)
1/2 tsp sea salt, or to taste
1/2 tsp freshly ground black pepper, or to taste


  1. Whisk together the yogurt, mayonnaise, mustard, lemon juice, salt and pepper. Makes 2/3 cup. Enjoy with cold salads like potato, pasta or summer squash.
