What to Eat Wednesday: An Oldie but Goodie


Our office continues to be open to all new and existing patients. We use hospital-grade sanitizers and are taking measures to ensure patients maintain social distancing by not having anyone wait in our reception room with others. The finished, diabetic Waldorf saladClassic recipes are classics for a reason—so good, they stand the test of time. Unfortunately, healthy eating trends and the rise in instances of diabetes (especially Type II) are more recent developments. Which means that older recipes tend not to worry about excessive amounts of carbs, fat, sugars and calories in general—things you can’t afford to overlook if you are living with diabetes.

That’s why I always get excited when I come across diabetic-friendly versions of some of my favorite menu items—like this Waldorf Salad from Food.com. Hope you enjoy!



  • 1 teaspoon lemon juice
  • 2 1⁄2 cups diced apples
  • 1 cup celery, in thin strips about 1-inch long
  • 1⁄2 cup broken walnuts
  • 1 tablespoon Splenda granular (sugar substitute)
  • 1 dash salt
  • 1⁄2 cup low fat vanilla yogurt
  • 2 tablespoons low fat mayo
  • crisp lettuce leaf



  1. Drizzle lemon juice over diced apples; toss well.
  2. Mix in celery and walnuts.
  3. Blend together sugar, salt, low-fat yogurt and mayonnaise.
  4. Fold into apple mixture; chill.
